Alien Burritos

A few months ago my boyfriend and I tried this coffee place here in Vegas called Sunrise Coffee (we are both coffee fanatics and always looking for a good coffee place). The coffee was ok...but while we were there we fell in love with their Alien Burrito (see picture below). It's basically a wrap with cous cous, hummus, refried beans, ranch, avocado, spinach, tomatoes, bell pepper, and a bit of cheese. We loved it so much we decided to recreate it at home. The results were so good that it's become a regular for us (and it has less calories! Which is always a plus :])

Here's the original Alien Burrito by Sunrise Coffee:

So, here are the ingredients for our version:

Tuffy's Alien Wraps (serves 2)
  • 2 lavash wraps (I use Joseph's)
  • 1/4 cup whole wheat cous cous
  • 4-6 TBSP hummus ( I make my own using Hungry Girl's artichoke hummus)
  • 4-6 TBSP vegetarian re-fried beans (I use Trader Joe's salsa re-fried beans)
  • Fat free ranch (or any ranch of your choice)
  • ~ 1/2 roma tomato, sliced
  • ~ 1/2 bell pepper, sliced (color of your choice)
  • ~1/4 large avocado, sliced (or more if you really like avocado)
  • a few handfuls of fresh spinach
  • a sprinkle of low-fat shredded cheese (I used Trader Joe's 3-cheese blend)

Directions:
  1. Cook the cous cous according to package directions. 
  2. Meanwhile,  cut up all your veggies, like so: 
  3. Lay out the Lavash. For the first layer I imagine I'm dividing the lavash into quadrants width-wise. In the farthest quadrant, cover with cous cous (divided between the 2 lavash wraps). In the next quadrant closest to you, spread the hummus width-wise (use 2-3 TBSP per lavash). For the third quadrant spread the re-fried beans (again, 2-3 TBSP per lavash). In the last quadrant, squeeze a bit of ranch to cover the quadrant. The amount of ranch you use is totally up to you, but I just make a little squiggle with it. When you're done it should look like this:
  4. Now you're going to layer the veggies on top. Usually what I do is layer the tomatoes so they lay on top of both the cous cous and hummus, the peppers on top of the hummus and beans, and the avocado over the beans (and a bit of the ranch if you need to). Top with a handful of spinach and a sprinkle of cheese (however much your heart desires). It should look like this when you're done:
  5. Last step! Rolling the lavash. I always start from the cous cous side and roll towards the ranch. This way the ranch acts as a kind of seal to keep the wrap together. And this is what the finished product will look like:

    Since I used lavash, both ends will be open (where as with a wrap the ends are closed off), but I've never had anything fall out (which I was worried about initially)...it stays together perfectly!

So that's the amazing alien burrito re-made into my own version, and alien wrap. I haven't done any official calculations, but I guess that the alien burrito probably had 800-900 calories. Based on quick calculations I did in my head, I think my alien wrap has about 500 or so calories. And it's super filling, a meal in itself.

This is going to be kind of an experiment for me. I'm not sure if it's going to work out, but maybe I'll have some fun trying to figure that out. 


Over time I'm hoping this will be a collection of recipes, DIY adventures, fashion & beauty, fitness & nutrition, and anything else I want to make it!


I decided to call this blog "Tuffy's Re-creations" because a lot of what I (Chelsea, aka Tuffy) will put on here are things that I have "re-created" with my own take. I love to re-make recipes so they are healthier. I like to do DIY projects, but usually change a few things to make it more my own. I like beauty (make up, hair, nail) tutorials, and will often blend that with some of my own ideas. 


So...here goes nothing...:)
